CCA December Meeting

The sourcing of seafood from global markets is the topic of the CCA of Skidaway’s December meeting on Monday, December 9, at St. Peter’s Church beginning at 7 p.m.

In an encore presentation, Chef Kirk Blaine (shown at right), owner of Castaways in Sandfly and The Howlin Hound on Waters, will discuss how the seafood market is driven by supply and demand and by local and regional purchasers and consumers, and how that affects availability and menus. Additionally, Blaine and members of his staff will prepare and serve some of their favorite appetizers – “recipes with a twist”.

Blaine, a Savannah native, was born with cooking and leadership in his blood. Following his graduation from Benedictine Military School, he attended the Culinary Institute of America in Hyde Park, NY, where he completed his Bachelor’s Degree in Hotel Restaurant Administration with Culinary Management. He honed his skills as executive chef of Driftaway Café and then took on an adventurous project and conceived the Restaurant at Cohen’s Retreat. Next came The Howlin Hound, an all-American casual gourmet lunch and dinner restaurant, and Castaways in Sandfly, a sport-fishing-themed restaurant boasting the freshest catches of the Low Country. He recently opened the upscale Grandview at Hotel Tybee, a private, reservable catering venue for events and celebrations.

Blaine is a family man, always welcoming his wife Ashley, son William, daughter Lillian, and dogs Buddy and Nelson into the kitchen. When not in the restaurant, he can be found contributing to one of his favorite charitable organizations, such as the Boy Scouts of America, Ronald McDonald House, Second Harvest Food Bank, The Humane Society, and many more.

Four lucky winners each will receive a $50 gift certificate to one of Chef Blaine’s restaurants in CCA’s December raffle.
